用料

做法

Braised Pork Rice (Lu Rou Fan)

Pork belly rendered until crisp-edged, shallots fried golden, sauce clinging to every grain of rice

30 min prep + 90 min slow braise · 3-4 servings · Medium · Savory-sweet and glossy

Ingredients

Steps

  1. Soak dried shiitake in warm water for 30 minutes, dice, and strain the soaking liquid. Mince the shallots.
  2. Dice the pork belly into 1cm pieces and pat them dry.
  3. Dry-heat a wok over medium heat and render the pork for 8-10 minutes until the fat renders and the edges turn lightly golden; set aside.
  4. In a little oil over low heat, fry the minced shallots 5-8 minutes until golden and crisp. Remove, drain, and crush into flakes.
  5. Return the shallot oil to medium heat, bloom ginger and garlic, then return the pork and stir-fry 2 minutes.
  6. Add the diced shiitake, splash in the rice wine along the hot edge, then add soy sauce paste, light soy, dark soy, rock sugar, white pepper and five-spice. Stir-fry until evenly coated.
  7. Pour in the strained mushroom water plus fresh water to cover the pork by 1cm. Bring to a boil, drop to the lowest heat, cover and simmer 50-60 minutes, stirring two or three times.
  8. Add the peeled eggs and tofu, simmer 15 minutes more; tofu should not stay in too long or it turns too soft.
  9. Uncover, raise to medium heat and reduce until the sauce coats a spoon. Taste and adjust salt, leaving sauce to pour over rice.
  10. Serve over steamed rice with braised pork and sauce, the eggs, tofu, blanched greens, pickled cucumber and a shower of shallot flakes.
Tips
  • Rendering the pork dry before braising is what keeps it from being greasy and gives the sauce body; dice the pork rather than mincing it, and keep the skin on for more gelatin and thicker sauce.
  • Fried shallots are the soul of the dish; small onions can stand in, but the aroma is noticeably thinner.
  • Soy sauce paste is the Taiwanese key; if unavailable, use light soy plus oyster sauce and let the rock sugar supply the sweetness (traditional recipes use shallots and soy paste, adjust to taste).
  • Braised pork rice is even better the next day; refrigerate up to two days and loosen with a splash of water when reheating.
Braised pork rice is the most everyday staple of Taiwan: soy-dark pork belly slow-cooked with fried shallots until glossy and tender, spooned over hot rice. The technique came with southern Chinese migrants and settled into family kitchens and night-market stalls alike.
